Born within Cooke Chile, Umi was created to connect the pristine waters of Patagonia with the refined art of Japanese cuisine.

The brand emerged from a simple vision — to bring exceptional sashimi grade salmon to new markets across Asia and beyond, building bridges between Chilean origin and global sushi culture.

Umi represents a next-generation approach to salmon: combining traceability, sustainability, and purity of flavor in every cut.

Sashimi-Grade Quality

Produced under carefully controlled processing, hygiene, and temperature management protocols to achieve the microbiological quality required for premium sashimi and sushi applications.

Throughout production, microbiological monitoring and strict quality control procedures are applied to verify that every batch meets the specifications established for sashimi-grade products, ensuring product integrity from processing to final packaging.


SalmoFan® min 24

Pigmentation developed to meet the visual expectations of premium sashimi and sushi presentation.

Each fillet is individually assessed during the grading process by trained personnel using the SalmoFan® color scale. This standardized evaluation ensures accurate color classification and delivers a consistent appearance across every shipment.


Enhanced Scale and Pin Bone Removal

Designed to deliver exceptionally clean fillets for professional sushi kitchens, where presentation and product integrity are essential.

Pin bones are removed manually by trained operators following a standardized procedure that ensures all 32 pin bones are extracted from every fillet. To further guarantee product quality, each fillet undergoes a second independent inspection, providing an additional level of verification before packaging.


Scale-Off Process

Our scale removal process is designed to preserve fillet integrity while achieving an exceptionally clean finish.

Scales are removed using a controlled water-pressure system rather than mechanical abrasion, minimizing handling and reducing the risk of meat gapping. To maintain consistent water pressure and optimal equipment performance, the system is thoroughly cleaned every two hours, preventing scale accumulation and ensuring reliable processing conditions throughout production.


Validated Umami

Validated maturation studies inspired by the Japanese Ikejime philosophy, conducted under controlled 0°C storage conditions to naturally enhance umami while preserving the freshness and texture of the fillet.

The maturation process is supported by ongoing sensory evaluation and quality monitoring to identify the optimal aging window, delivering a richer flavor profile while maintaining the characteristics expected for premium sashimi-grade salmon.
